  • 1 pound 80/20 ground beef
  • 4 large flour tortillas
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 medium white onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: diced tomatoes, fresh cilantro, sour cream

Instructions

  1. Dice the onion and mince the garlic, keeping them ready in a bowl.
  2. Heat a skillet over medium-high heat and add olive oil. Once shimmering, add the ground beef and break it into small crumbles. Cook until browned, about 5-7 minutes.
  3. Push the beef to the side of the pan and add the diced onions. Cook for 2-3 minutes until softened, then add the minced garlic and cook for 30 seconds.
  4. Sprinkle smoked paprika, cumin, salt, and black pepper over the beef and onions. Mix well and taste to adjust seasoning.
  5. Lower heat to medium. Place a tortilla in the pan and sprinkle half the cheese blend on one half. Top with beef mixture, then add more cheese on top to act as glue.
  6. Fold the tortilla in half and press gently. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  7. Carefully flip the quesadilla and cook the other side for 2-3 minutes until cheese is melted. If needed, cover with a lid for a minute to trap steam.
  8. Remove from pan and let rest for 1 minute before slicing into wedges. Repeat with remaining tortillas.

Notes

For best texture, shred block cheese yourself as pre-shredded cheese contains anti-caking agents. Use medium heat to prevent burning the tortilla before the cheese melts. Let the quesadilla rest for 1 minute before cutting to allow cheese to set. Can be made in an air fryer at 375°F for 6-8 minutes or in an oven at 400°F for 10-12 minutes.
