  • Author: abigail_patterson
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A quick, refreshing, and healthy shrimp ceviche featuring fresh lime juice, creamy avocado, and crisp vegetables. This dish is perfect for warm weather and busy weeknights.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 6 to 8 fresh key limes (yielding about 1 cup juice)
  • 2 medium jalapeño peppers, finely chopped
  • 1 medium red onion, finely diced
  • 1 large bunch fresh cilantro, chopped
  • 1 English cucumber, peeled and diced
  • 2 large ripe avocados, diced
  • 2 Roma tomatoes, seeded and diced
  • Sea salt to taste
  • Freshly cracked black pepper

Instructions

  1. Rinse shrimp under cold water and pat completely dry. Place in a medium bowl.
  2. Roll limes on counter to soften, then juice and strain to get about 1 cup of fresh lime juice.
  3. Pour lime juice over shrimp, ensuring they are submerged. Let sit for 10 minutes, stirring once halfway through, until shrimp turn opaque and pink.
  4. While shrimp cure, dice red onion, cucumber, and tomatoes. Soak diced onion in cold water for 5 minutes to reduce bite, then drain well. Chop cilantro and jalapeños.
  5. Drain about half of the lime juice from the shrimp. Add the drained onion, cucumber, tomatoes, jalapeños, and cilantro to the shrimp. Stir gently.
  6. Season with salt and pepper to taste. Cover and refrigerate for 10-15 minutes to let flavors meld.
  7. Just before serving, dice avocados and toss with a little extra lime juice to prevent browning.
  8. Spoon ceviche into serving bowls, top generously with avocado, garnish with extra cilantro and flaky sea salt. Serve immediately.

Notes

Ensure shrimp are fully opaque and pink before serving. If using frozen shrimp, thaw completely in cold water and pat very dry to avoid watery ceviche. Serve immediately as avocado will brown if left out. Do not freeze ceviche.
