  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon oil (for cooking)
  • Salt and black pepper to taste
  • 4 large flour tortillas (or low-carb/gluten-free alternatives)
  • 1 cup carrots, shredded
  • 2 cups mixed cabbage, shredded
  • 1 bell pepper, thinly sliced
  • 2 green onions, sliced
  • Fresh cilantro, chopped (optional)

Instructions

  1. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, garlic, ginger, and red pepper flakes until smooth. Add warm water if needed to reach a drizzling consistency.
  2. Slice chicken breasts into thin strips against the grain and season with salt and pepper.
  3. Heat oil in a non-stick skillet over medium-high heat. Cook chicken strips in a single layer for 3-4 minutes until seared, then flip and cook for another 2-3 minutes until cooked through. Remove from pan.
  4. While chicken cooks, prepare vegetables by shredding carrots and cabbage, and slicing bell pepper and green onions.
  5. Warm tortillas in a dry pan or microwave for 20 seconds to make them pliable.
  6. Assemble wraps by spooning peanut sauce onto the center of each tortilla, topping with chicken, vegetables, and green onions.
  7. Fold the bottom of the tortilla over the filling, fold in the sides, and roll tightly. Slice in half diagonally and serve immediately.

Notes

Slice chicken against the grain for tenderness. Do not overcrowd the pan when cooking chicken to ensure proper searing. For meal prep, store components separately to prevent soggy tortillas. Peanut butter should be at room temperature for easier whisking.
