Description
These easy 4-ingredient monster cookies combine strawberry cake mix, peanut butter, eggs, and chocolate chips for a soft, chewy, and indulgent treat that comes together in under 30 minutes.
Ingredients
Scale
- 1 box (15.25 oz / 432g) strawberry cake mix
- 1 cup (250g) creamy peanut butter
- 2 large eggs, room temperature
- 1 cup (170g) mini chocolate chips
- Optional: White chocolate chips or crushed strawberry hard candies
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, whisk the eggs and peanut butter together until smooth and combined.
- Add the entire box of dry cake mix to the bowl and mix with a spatula until a thick, dough-like consistency forms.
- Fold in the mini chocolate chips (and any optional mix-ins) gently to avoid overworking the dough.
- Scoop or spoon the dough onto prepared baking sheets, leaving 2 inches between each cookie.
- Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
- Let cookies cool on the baking sheet for at least 10 minutes before transferring to a wire rack or serving.
Notes
Ensure peanut butter is not too warm to prevent excessive spreading. Cookies are fragile when hot, so allow them to cool completely on the pan. Store in an airtight container with a piece of bread to maintain softness. Can be frozen for up to 3 months.
