  • 23 tbsp gochujang paste
  • 1 cup kimchi (napa cabbage variety), finely chopped and squeezed dry
  • 1 large egg
  • 1 tbsp soy sauce (low-sodium recommended)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 stalks scallions, finely chopped
  • 1 tsp sesame oil
  • 4 burger buns (brioche or potato rolls)
  • Vegetable oil (for cooking)

Instructions

  1. Prepare the kimchi by squeezing out as much liquid as possible and patting it dry with paper towels.
  2. In a large bowl, combine ground chicken, minced garlic, grated ginger, chopped scallions, soy sauce, sesame oil, and gochujang paste. Mix gently until just combined.
  3. Add the egg and dried kimchi to the chicken mixture. Fold until evenly distributed. If too loose, add 1 tbsp panko breadcrumbs or cornstarch.
  4. Divide mixture into four equal portions. Wet hands slightly and form into patties, making them slightly wider than buns. Press an indentation in the center of each patty.
  5. Heat a skillet over medium-high heat with vegetable oil. Cook patties for 4-5 minutes on the first side until browned.
  6. Flip patties and cook for another 4-5 minutes on the second side. Add cheese if desired and cover for the last minute to melt. Ensure internal temperature reaches 165°F (74°C).
  7. Toast burger buns cut-side down in the skillet or a separate pan.
  8. Assemble burgers by spreading gochujang mayo on the bottom bun, adding the chicken patty, fresh kimchi, and optional toppings like cucumber or sesame seeds. Top with the bun.

Notes

Ensure kimchi is thoroughly dried to prevent patties from falling apart. Do not overmix the chicken to avoid a tough texture. Keep hands cool to prevent fat from melting prematurely. For meal prep, these freeze well for up to 3 months.
