Description

These energizing chicken burgers combine ground chicken with spicy gochujang paste and tangy kimchi for a flavorful, meal-prep-friendly lunch that sustains energy without the afternoon slump.


Ingredients

  • 1 lb ground chicken (preferably thighs)
  • 1 cup kimchi, chopped and drained
  • 3 tbsp gochujang paste
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 stalks green onions, finely chopped
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 1 large egg
  • 1 tbsp cornstarch

Instructions

  1. Drain the kimchi thoroughly in a fine-mesh strainer, pressing out excess liquid, then chop into small pieces.
  2. In a large mixing bowl, whisk together gochujang paste, maple syrup, minced garlic, grated ginger, green onions, sesame oil, egg, and cornstarch until smooth.
  3. Add the ground chicken to the bowl and gently mix with hands until evenly distributed. Fold in the chopped kimchi carefully to avoid crushing it.
  4. Divide the mixture into four equal portions. Wet hands slightly and shape into patties about 3/4-inch thick, making a slight indent in the center of each.
  5. Heat a skillet over medium heat with a light coating of oil. Cook patties for 4-5 minutes on the first side until a crust forms, then flip and cook for another 3-5 minutes until internal temperature reaches 165°F.
  6. Toast burger buns in the same pan or a toaster.
  7. Let burgers rest for 2 minutes, then assemble with buns and desired toppings.

Notes

Drain kimchi thoroughly to prevent soggy patties. Do not overmix the meat to keep burgers tender. Control heat to prevent burning from sugar in gochujang. Let burgers rest before serving to redistribute juices. Can be made in an air fryer at 375°F for 10-12 minutes.
