  • 1 lb Ribeye or Sirloin steak, sliced into thin strips against the grain
  • 4 slices thick rustic Sourdough bread
  • 1 large Honeycrisp or Granny Smith apple, sliced into thin half-moons
  • 1 large yellow or sweet onion, sliced thinly
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter, softened
  • 1 tbsp extra virgin olive oil
  • Kosher salt and freshly cracked black pepper
  • Pinch of thyme or rosemary (optional)
  • Provolone or Swiss cheese slices (optional)

Instructions

  1. Slice the steak into thin strips against the grain. Slice the apple into thin half-moons. Mince the garlic and slice the onion thinly. Pat the steak dry with paper towels.
  2. Heat a large skillet over medium heat. Add a tablespoon of butter. Toast the sourdough slices on both sides until golden brown. Remove and set aside.
  3. In the same skillet, add a little more butter or oil. Add the sliced onions and a pinch of salt. Cook slowly for 8-10 minutes, stirring occasionally, until soft and caramelized.
  4. Increase the heat to high. Add olive oil to the pan. Once the oil shimmers, add the steak strips in a single layer. Sear for 1-2 minutes per side until browned.
  5. Add the minced garlic to the steak during the last 30 seconds of cooking. Add the apple slices to the pan and toss everything together for 1-2 minutes until apples soften slightly.
  6. Layer the steak and apple mixture onto the toasted bread. If using cheese, add it now and cover the pan briefly to melt. Top with the caramelized onions.
  7. Season with salt and pepper to taste. Cut the sandwich in half diagonally and serve immediately.

Notes

Slice steak against the grain for tenderness. Do not overcrowd the pan to ensure proper searing. Let the steak rest for a few minutes after cooking to redistribute juices. Toast bread first to prevent sogginess. For best results, serve immediately.
