Description
These soft, chewy confetti cookies are made using a simple cake mix base for a quick and easy dessert. With added brown sugar and cornstarch, they offer a tender, cake-like crumb with crisp edges, perfect for any occasion.
Ingredients
Scale
- 15.25 oz box Yellow or Vanilla Cake Mix
- 1/2 cup Unsalted Butter, softened
- 1/4 cup Vegetable Oil
- 1 Large Egg, room temperature
- 1/2 cup Brown Sugar, packed
- 1/4 cup Granulated White Sugar
- 1 tsp Vanilla Extract
- 1 tsp Cornstarch
- 1/2 cup Rainbow Sprinkles
- 1/4 tsp Salt
Instructions
- Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated white sugar until light and fluffy (about 2-3 minutes).
- Add the egg, vegetable oil, and vanilla extract to the butter mixture. Mix on low speed until just combined.
- Add the cake mix and cornstarch to the wet ingredients. Mix on low speed until a thick, sticky dough forms.
- Gently fold in the rainbow sprinkles using a spatula.
- Scoop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, ensure butter and egg are at room temperature. Do not overmix the dough once the cake mix is added to maintain a tender texture. Pull cookies from the oven when centers are still slightly soft to ensure they remain chewy. Store in an airtight container with a slice of bread to keep soft.
