Soft Caramel Apple Cookies

  • Author: abigail_patterson
  • Total Time: 45 minutes
  • Yield: 24 cookies 1x

Description

Chewy, tender cookies packed with fresh diced Gala apples and a sweet caramel swirl, offering the perfect balance of fall flavors in an easy-to-make treat.

Ingredients

Scale
  • 2 ½ cups (315g) All-Purpose Flour
  • 1 cup (226g) Unsalted Butter, softened
  • ¾ cup (150g) Granulated Sugar
  • 1 cup (200g) Brown Sugar, packed
  • 2 large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 2 medium Fresh Gala Apples, diced small (¼-inch cubes)
  • 1 teaspoon Cinnamon
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • ½ cup Caramel Sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Dice apples into small, uniform cubes and set aside.
  3. In a large mixing bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  4. Add eggs one at a time, mixing well after each addition, then add vanilla extract and mix until combined.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  6. Gradually add dry ingredients to wet ingredients and mix until just combined.
  7. Gently fold in diced apples using a silicone spatula. If dough is too wet, chill for 15 minutes.
  8. Scoop dough onto prepared baking sheets, leaving 2 inches between cookies.
  9. Drizzle warmed caramel sauce over each cookie and swirl with a toothpick.
  10. Bake for 12-14 minutes until edges are lightly golden but centers look soft.
  11. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure butter is softened but not melted to prevent excessive spreading. Do not overbake; cookies should look slightly underdone when removed from the oven as they continue to cook on the hot sheet. Store in an airtight container with a slice of bread to maintain softness.
