Ingredients

  • 1 rack pork spare ribs or baby back ribs
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 cup BBQ sauce (plus extra for serving)

Instructions

  1. Place the rack of ribs meat-side down and remove the silverskin membrane from the bone side using a knife and paper towel for grip.
  2. In a small bowl, whisk together brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper to create the dry rub.
  3. Pat the ribs dry with paper towels and generously apply the dry rub to both sides, pressing it into the meat.
  4. Arrange the ribs in a 6-quart slow cooker. If necessary, bend them to fit the curve. Pour soy sauce and apple cider vinegar around the ribs.
  5. Cover and cook on LOW for 6 to 8 hours until the meat is tender and pulling back from the bones.
  6. Remove ribs from the slow cooker and place on a cutting board. Pour out excess liquid from the pot.
  7. Brush a generous layer of BBQ sauce over the top of the ribs.
  8. Broil for 2-3 minutes to caramelize the sauce, or microwave for 1-2 minutes to warm the sauce.
  9. Let the ribs rest for 10 minutes before slicing between the bones and serving.

Notes

Ensure the membrane is removed for best texture. Do not cook on HIGH as it may make the meat mushy. If using baby back ribs, reduce cooking time to 4-5 hours. Leftovers can be stored in the fridge for 3 days or frozen for 3 months.
