  • 1.5 lbs beef bites (chuck roast cut into 1-inch cubes)
  • 1.5 lbs baby potatoes (red or Yukon Gold)
  • 1 cup beef broth (low-sodium recommended)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp butter
  • Salt and black pepper to taste

Instructions

  1. Pat beef bites dry with paper towels. Optionally sear in a hot pan with oil for 2-3 minutes for deeper flavor.
  2. Wash potatoes; leave small ones whole or halve larger ones. Dice onion and mince garlic.
  3. Place beef, potatoes, onion, and garlic into the slow cooker insert.
  4. Add dried thyme, bay leaf, beef broth, black pepper, and a pinch of salt.
  5. Cover and cook on Low for 6-8 hours until beef and potatoes are tender.
  6. Remove bay leaf. Stir in butter to enrich the gravy.
  7. Taste and adjust seasoning. If gravy is too thin, mix 1 tsp cornstarch with cold water and cook on High for 10 minutes to thicken.
  8. Serve hot, ladling beef and potatoes with extra gravy.

Notes

For best results, use chuck roast for juicy beef and waxy potatoes like red or Yukon Gold to prevent mushiness. If cooking on High, add potatoes halfway through to prevent overcooking. The dish can be frozen for up to 3 months, though potatoes may soften upon thawing.
