Shrimp Avocado Bowl With Mango

  • Author: abigail_patterson
  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Description

A quick, vibrant, and nutrient-dense bowl featuring seared shrimp, sweet mango, creamy avocado, and fresh greens with a bright lime-cilantro vinaigrette. This meal provides steady energy without the afternoon crash.

Ingredients

Scale
  • 1 pound jumbo shrimp, peeled and deveined
  • 2 large ripe mangos, cubed
  • 2 ripe avocados, sliced
  • 4 cups fresh greens (mix of baby spinach and arugula)
  • 1/2 medium red onion, thinly sliced
  • 1 generous handful fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons extra virgin olive oil
  • Sea salt and black pepper to taste
  • Flaky sea salt for garnish

Instructions

  1. Wash and dry the greens thoroughly. Toss them into a large serving bowl.
  2. Add the thinly sliced red onion to the greens. Chop the cilantro and set aside.
  3. In a small bowl or jar, combine the lime juice, olive oil, a pinch of sea salt, and black pepper. Whisk vigorously until emulsified. Set aside.
  4. Slice the mangos off the pit and cube them into bite-sized pieces. Place in a separate bowl.
  5. Pat the shrimp dry with paper towels. Season with salt, pepper, and optional chili powder or cumin. Toss to coat evenly.
  6. Heat a large skillet or grill pan over medium-high heat with a tiny splash of oil.
  7. Add shrimp in a single layer (cook in batches if necessary). Cook for 2-3 minutes per side until pink and opaque. Remove from heat immediately.
  8. Place the cooked shrimp on top of the greens in the serving bowl.
  9. Arrange the mango cubes and sliced avocado neatly over the shrimp and greens.
  10. Drizzle the lime-cilantro dressing over everything.
  11. Sprinkle with fresh cilantro and flaky sea salt. Serve immediately.

Notes

Do not overcook the shrimp as they will become rubbery; they continue to cook slightly after removal from heat. Dry shrimp thoroughly before cooking to ensure a good sear. Slice avocado just before serving to prevent browning. For meal prep, store components separately and assemble right before eating.
