Description

A quick and vibrant weeknight meal that transforms leftover shakshouka sauce into a crispy, cheesy toast topped with a perfectly runny egg. Ready in under 15 minutes with simple pantry staples.


Ingredients

  • Thick-cut sourdough bread
  • Crushed tomatoes or marinara sauce
  • Large eggs
  • Feta or goat cheese, crumbled
  • Red pepper flakes
  • Fresh parsley or cilantro, chopped
  • Extra virgin olive oil
  • Garlic, minced
  • Onion, diced
  • Salt and black pepper to taste

Instructions

  1. Heat a tablespoon of olive oil in a 10-inch skillet over medium heat. Add diced onion and cook for 3 minutes until soft.
  2. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Pour in crushed tomatoes or marinara. Stir in red pepper flakes, salt, and black pepper. Simmer for 5 minutes until the sauce thickens slightly.
  4. Toast sourdough slices until golden and crisp. Set aside on a plate.
  5. Spoon a generous layer of the hot tomato sauce over each slice of toast.
  6. Carefully crack an egg onto each slice of toast, keeping the yolk centered.
  7. Option A (Stovetop): Cover the skillet with a lid and cook on low heat for 3-4 minutes to steam the egg whites.
  8. Option B (Oven): Transfer the skillet to the oven and broil for 2-3 minutes, watching closely until whites are set and yolks are jiggly.
  9. During the last minute of cooking, sprinkle crumbled feta or goat cheese over the eggs to melt.
  10. Remove from heat. Sprinkle with fresh parsley or cilantro and drizzle with extra virgin olive oil. Serve immediately.

Notes

If eggs are cold from the fridge, let them sit out for 10 minutes before cooking for more even results. Ensure the sauce is thick to prevent soggy toast. Do not freeze leftovers as eggs and bread texture will suffer. Leftover sauce can be stored in the fridge for up to 3 days.
