Description

A hearty, low-carb version of the classic Philly cheesesteak served in a bowl. This quick and easy dinner features seared flank steak, sautéed peppers and onions, and melted provolone cheese, perfect for keto and gluten-free diets.


Ingredients

  • 1 lb flank steak or ribeye, sliced thinly against the grain
  • 2 bell peppers (mix of green and red), sliced into thin strips
  • 1 large yellow onion, sliced into half-moons
  • 2 tbsp cooking oil (olive oil, avocado oil, or butter)
  • 3 cloves garlic, minced
  • 4 slices provolone cheese
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • Optional: Worcestershire sauce, mushrooms, hot sauce, or pickled peppers

Instructions

  1. Slice the flank steak against the grain into thin strips. If the meat is too soft to slice, freeze for 15-20 minutes to firm it up. Season generously with salt, pepper, and garlic powder.
  2. Wash and slice the bell peppers and onions into thin, uniform strips.
  3. Heat a large skillet (preferably cast-iron) over medium-high heat. Add half the oil. Once shimmering, add half the beef in a single layer. Cook for 2-3 minutes until browned and charred, flip, and cook for another minute. Remove beef to a plate. Repeat with remaining beef.
  4. In the same pan, add a bit more oil if needed. Toss in the onions and peppers. Cook for 5-7 minutes, stirring occasionally, until softened and slightly caramelized.
  5. Return the cooked beef to the pan with the vegetables. Add minced garlic and cook for 30 seconds until fragrant.
  6. Reduce heat to low. Layer provolone cheese slices over the top. Cover the pan with a lid for 1-2 minutes until cheese is fully melted. Alternatively, stir in Cheez Whiz at this stage.
  7. Remove from heat and serve immediately in bowls. Top with extra cheese, hot sauce, or pickled peppers if desired.

Notes

Do not overcrowd the pan to ensure the beef sears rather than steams. Slice beef against the grain for tenderness. Add garlic last to prevent burning. This recipe does not freeze well due to the cheese and peppers; store leftovers in the refrigerator for up to 3 days.
