Ingredients
- 1 cup (226g) unsalted butter, room temperature
- 1 cup (200g) dark brown sugar
- 1/2 cup (100g) granulated white sugar

- 2 cups (250g) all-purpose flour
- 1 tsp baking soda

- 3 cups (270g) old-fashioned rolled oats
- 1 cup (100g) chopped walnuts, toasted
- 1 cup (90g) unsweetened shredded coconut
- 1 1/2 cups (250g) semi-sweet or dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. Toast walnuts in a dry pan for 3-5 minutes until fragrant, then let cool and chop.
- In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in vanilla extract.
- In a separate medium bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing on low speed or stirring by hand until just combined. Do not overmix.
- Fold in rolled oats, toasted walnuts, shredded coconut, and chocolate chips. The dough will be thick and chunky.
- Scoop or spoon dough onto prepared baking sheets, leaving 2 inches between cookies. Gently press tops down slightly.
- Bake for 12-14 minutes until edges are golden brown but centers look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Measure oats by spooning into the cup and leveling off to avoid packing. Do not overbake; cookies continue to cook on the hot pan. For best texture, use old-fashioned rolled oats, not instant. Chilling the dough for 30 minutes can prevent excessive spreading. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
