Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. Toast walnuts in a dry pan for 3-5 minutes until fragrant, then let cool and chop.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in vanilla extract.
  4. In a separate medium bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed or stirring by hand until just combined. Do not overmix.
  6. Fold in rolled oats, toasted walnuts, shredded coconut, and chocolate chips. The dough will be thick and chunky.
  7. Scoop or spoon dough onto prepared baking sheets, leaving 2 inches between cookies. Gently press tops down slightly.
