Description
A quick and elegant weeknight dinner featuring firm cod fillets topped with a crunchy, savory parmesan and panko crust. This recipe is designed to be stress-free, healthy, and delicious, ready in about 20 minutes.
Ingredients
Scale
- 1.5 to 2 pounds cod fillets
- 1 cup freshly grated parmesan cheese
- 1 cup panko breadcrumbs
- 4 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 1 large lemon (zested and juiced)
- Salt and black pepper to taste
- Optional: red pepper flakes or dried oregano
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil and lightly grease.
- Pat cod fillets completely dry with paper towels. Season both sides generously with salt and black pepper. Place on the prepared baking sheet.
- In a medium bowl, combine grated parmesan, panko breadcrumbs, garlic powder, dried parsley, and half of the lemon zest. Whisk to distribute evenly.
- Pour melted butter over the breadcrumb mixture and stir until the crumbs are moistened but not soggy (like wet sand).
- Press the crust mixture firmly onto the top of each cod fillet to ensure it adheres. Drizzle remaining lemon juice over the tops.
- Bake for 12-15 minutes, or until the crust is golden brown and the fish is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Remove from oven and let rest for 2-3 minutes. Garnish with fresh parsley and lemon wedges. Serve immediately.
Notes
Ensure cod fillets are patted completely dry before seasoning to help the crust stick. Do not overcook the fish, as it can become rubbery. If the crust browns too quickly, tent loosely with foil. For a low-carb option, substitute panko with crushed pork rinds or almond flour.
