Instructions

  1. Prep ingredients: Peel and dice sweet potatoes into 1/2-inch cubes. Dice onion and red bell pepper. Mince garlic.
  2. Brown the beef: Heat a large 12-inch skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until no longer pink (6-7 minutes). Drain excess grease if desired, leaving about 1 tablespoon. Remove beef and set aside.
  3. Cook sweet potatoes: Add olive oil to the same skillet. Once shimmering, add sweet potatoes in a single layer. Cook undisturbed for 3-4 minutes to form a crust, then stir and cook for another 6-8 minutes until tender but still firm.
  4. Add veggies and spices: Add diced onions and bell peppers to the skillet. Stir to combine. Sprinkle in smoked paprika, cumin, garlic powder, and cayenne. Cook for 2 minutes until onions are translucent. Add minced garlic in the last minute.
  5. Combine and finish: Return the cooked beef to the skillet. Toss gently to combine. Season generously with salt and black pepper. Cook for 1-2 minutes to heat through and meld flavors.
  6. Serve: Remove from heat. Garnish with fresh parsley if using. Serve immediately while hot.

Ensure sweet potatoes are cut uniformly for even cooking. Do not overcrowd the pan; cook in batches if necessary. Let potatoes sit undisturbed initially to develop a crispy crust.
