Description
A quick, one-skillet dinner featuring crispy potatoes and savory ground turkey with herbs. This gut-friendly meal is perfect for busy weeknights, offering high protein and resistant starch for sustained energy.
Ingredients
- 1.5 lbs ground turkey (93% or 99% lean)
- 2 large Yukon Gold potatoes (approx. 1 lb), cut into 1/2-inch cubes
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried paprika (smoked paprika optional)
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
Instructions
- Prep vegetables: Peel or scrub potatoes and cut into 1/2-inch cubes. Dice the onion and mince the garlic.
- Heat a 12-inch skillet over medium-high heat and add olive oil. Let it shimmer.
- Add potatoes in a single layer. Season with salt and pepper. Cook undisturbed for 5 minutes to crisp, then stir and cook for another 5-7 minutes until tender. Remove potatoes and set aside.
- Reduce heat to medium. Add ground turkey to the same skillet. Break into small crumbles and cook for 5-7 minutes until browned and no longer pink. Drain excess grease if necessary.
- Push turkey to one side. Add diced onions and cook for 2 minutes until softened. Add garlic, thyme, paprika, and garlic powder. Stir and cook for 1 minute until fragrant.
- Return potatoes to the skillet. Pour in chicken broth and stir to deglaze the pan, lifting browned bits. Bring to a simmer.
- Cover with a lid and cook for 3-4 minutes to allow potatoes to absorb flavors and finish cooking.
- Remove lid, taste, and adjust seasoning with salt and pepper. If dry, add a splash of broth. Garnish with fresh parsley and serve immediately.
Notes
For best texture, do not skip pre-cooking the potatoes to ensure they are crispy. Use Yukon Gold potatoes for a creamy interior that holds shape. If using 99% lean turkey, ensure the pan is well-oiled to prevent dryness. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
