  • 1 lb (450g) 93% lean ground turkey
  • 2 large Yukon Gold potatoes, diced into half-inch cubes
  • 1 medium yellow onion, diced finely
  • 34 garlic cloves, freshly minced
  • 1 large red bell pepper, diced
  • 1/2 cup (120ml) low-sodium chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat a large skillet (preferably 12-inch cast iron or non-stick) over medium-high heat. Add olive oil and let it warm until it shimmers.
  2. Add diced potatoes to the hot skillet, seasoning lightly with salt and pepper. Spread in an even layer and cook undisturbed for 3-4 minutes to develop a golden crust. Stir and continue cooking for 6-8 minutes until tender and browned. Cover for the last few minutes if needed to steam.
  3. Push potatoes to one side of the pan. Add diced onion and bell pepper to the empty space. Sauté for 2-3 minutes until onions are translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey to the pan, breaking it up with a spoon. Season with Italian seasoning, smoked paprika, salt, and pepper. Cook for 5-7 minutes until no longer pink and crumbles easily.
  5. Mix the turkey with the potatoes and vegetables. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Cover and simmer for 5 minutes to meld flavors and finish cooking potatoes.
  6. Remove the lid, taste, and adjust seasoning. Garnish with fresh parsley if desired. Serve immediately.

Notes

Ensure potatoes are cut into uniform half-inch cubes for even cooking. Do not overcrowd the pan to allow potatoes to crisp up. If using Russet potatoes, they may become mealy; Yukon Golds are preferred for texture. This recipe is naturally gluten-free and dairy-free, but check spice blends for hidden additives.
