A hearty, healthy, and quick weeknight dinner featuring crispy potatoes and savory ground turkey cooked in a single skillet. This versatile meal is ready in under 30 minutes and is naturally gluten-free and dairy-free.
Ingredients
- 1 lb (450g) 93% lean ground turkey
- 2 large Yukon Gold potatoes, diced into half-inch cubes
- 1 medium yellow onion, diced finely
- 3–4 garlic cloves, freshly minced
- 1 large red bell pepper, diced
- 1/2 cup (120ml) low-sodium chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 2 tbsp extra virgin olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat a large skillet (preferably 12-inch cast iron or non-stick) over medium-high heat. Add olive oil and let it warm until it shimmers.
- Add diced potatoes to the hot skillet, seasoning lightly with salt and pepper. Spread in an even layer and cook undisturbed for 3-4 minutes to develop a golden crust. Stir and continue cooking for 6-8 minutes until tender and browned. Cover for the last few minutes if needed to steam.
- Push potatoes to one side of the pan. Add diced onion and bell pepper to the empty space. Sauté for 2-3 minutes until onions are translucent. Add minced garlic and cook for 30 seconds until fragrant.
- Add ground turkey to the pan, breaking it up with a spoon. Season with Italian seasoning, smoked paprika, salt, and pepper. Cook for 5-7 minutes until no longer pink and crumbles easily.
- Mix the turkey with the potatoes and vegetables. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Cover and simmer for 5 minutes to meld flavors and finish cooking potatoes.
- Remove the lid, taste, and adjust seasoning. Garnish with fresh parsley if desired. Serve immediately.

Ensure potatoes are cut into uniform half-inch cubes for even cooking. Do not overcrowd the pan to allow potatoes to crisp up. If using Russet potatoes, they may become mealy; Yukon Golds are preferred for texture. This recipe is naturally gluten-free and dairy-free, but check spice blends for hidden additives.
