One-Skillet Cowboy Stir Fry: Easy 20-Minute Dinner

  • Author: abigail_patterson
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

A hearty, flavorful weeknight meal that comes together in just 20 minutes using a single skillet. This stir fry features seared flank steak, crisp vegetables, and a smoky BBQ sauce for a comforting dinner that is easy to make and clean up.

Ingredients

Scale
  • 1.5 lbs flank steak or sirloin, sliced thinly against the grain
  • 1 medium yellow onion, diced
  • 2 large bell peppers, sliced into strips
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika

Instructions

  1. Slice the flank steak against the grain into thin strips. Season with salt, black pepper, and garlic powder, and let sit while prepping vegetables.
  2. Dice the yellow onion and slice the bell peppers into strips. Mince the garlic.
  3. In a small bowl, whisk together the BBQ sauce, soy sauce, Worcestershire sauce, brown sugar, and smoked paprika. Set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add beef in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side. Remove beef and set aside.
  5. In the same skillet, add onions and bell peppers. Cook for 3-4 minutes until tender-crisp. Add garlic in the last minute.
  6. Return the beef to the skillet. Pour the sauce over the beef and veggies. Toss to coat evenly and simmer for 2-3 minutes until the sauce thickens.
  7. Taste and adjust seasoning if needed. Serve immediately.

Notes

Slice beef against the grain for tenderness. Do not overcrowd the pan when searing beef to ensure a good sear rather than steaming. The dish stores well in the fridge for up to 3 days and freezes for up to 2 months. For a spicy kick, add jalapeño or red pepper flakes.
