  • 1 pound smoked sausage (Andouille or Kielbasa), sliced into half-moon coins
  • 2 medium green bell peppers, sliced into strips
  • 1 medium red bell pepper, sliced
  • 1 large yellow onion, sliced into half-moons
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon Dijon mustard
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil (optional, if sausage fat is insufficient)

Instructions

  1. Slice the sausage, bell peppers, and onions into similar-sized strips. Mince the garlic.
  2. Heat a large skillet (preferably cast-iron) over medium-high heat. Add the sliced sausage in a single layer and sear undisturbed for 2 minutes.
  3. Flip the sausage and cook for another 3-4 minutes until browned and crispy. Remove sausage from the pan and set aside, leaving the rendered fat in the pan.
  4. Reduce heat to medium. Add the onions and bell peppers to the hot fat. If the pan looks dry, add olive oil. Cook for 8-10 minutes, stirring occasionally, until veggies soften and caramelize.
  5. Add the minced garlic, smoked paprika, and cumin. Stir constantly for about 60 seconds until fragrant, being careful not to burn the garlic.
  6. Return the cooked sausage to the pan. Pour in the soy sauce, apple cider vinegar, and Dijon mustard. Toss to coat everything evenly.
  7. Simmer for 2 minutes to let flavors meld. Adjust seasoning if needed.
  8. Serve immediately while hot.

Notes

Do not overcrowd the pan to ensure proper searing rather than steaming. If using turkey sausage, add a little more oil as it is leaner. For a spicy kick, add cayenne pepper or jalapeño. This dish reheats well and freezes for up to 3 months.
