- 1 cup cherry tomatoes, halved
- 1 ball (8 ounces) fresh mozzarella cheese, torn into bite-sized pieces
- 4 large eggs, room temperature
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- Salt and black pepper, to taste
- 1 clove garlic, minced (optional)
Instructions
- Prep ingredients: Halve tomatoes, tear mozzarella, whisk eggs with salt and pepper, and mince garlic if using.
- Heat a 10-inch skillet over medium heat and add olive oil.
- Add tomatoes (and garlic if using) to the skillet and cook for 5 minutes until softened and juices are released.
- Pour whisked eggs over the tomatoes and spread evenly. Cook for 2-3 minutes until edges set but center is slightly runny.
- Scatter mozzarella over the eggs. Cover with a lid or foil and cook for 1-2 minutes until cheese is melted.
- Remove from heat, sprinkle with fresh basil, and drizzle with balsamic glaze. Let rest for 1 minute before serving.
Notes
Use fresh mozzarella packed in water for best melting. Ensure balsamic glaze is gluten-free if necessary. Do not overcook eggs to maintain creaminess. Can be customized with spinach, mushrooms, or red pepper flakes.
