  • 1 lb Andouille sausage, sliced into half-moons
  • 1 tbsp unsalted butter
  • 1 large yellow onion, diced
  • 2 bell peppers (1 red, 1 green), diced
  • 4 cloves garlic, minced
  • 1 cup long grain white rice (uncooked)
  • 2 cups low-sodium chicken broth
  • 1 tbsp Creole seasoning
  • 2 green onions, sliced (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients by slicing sausage, dicing onions and peppers, and mincing garlic.
  2. Heat a large skillet over medium-high heat. Sear sausage in a single layer for 2-3 minutes until browned, then stir and cook for 2 more minutes. Remove sausage and set aside, leaving fat in the pan.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add onions and bell peppers. Sauté for 5 minutes until softened. Add garlic in the last minute.
  4. Add uncooked rice to the skillet. Stir to coat in fat and butter, toasting for 2 minutes until nutty.
  5. Pour in chicken broth and sprinkle with Creole seasoning. Stir well and bring to a boil.
  6. Reduce heat to low, cover with a tight-fitting lid, and simmer for 18-20 minutes without lifting the lid.
  7. Remove from heat and let rest, covered, for 5 minutes.
  8. Fluff rice with a fork, stir the cooked sausage back in, garnish with green onions, and serve immediately.

Notes

Do not skip toasting the rice; it adds nutty flavor and prevents mushiness. Do not crowd the pan when searing sausage to ensure proper browning. Use low-sodium broth as andouille is salty. Let the rice rest after cooking to allow grains to separate. If using brown rice, increase cooking time to 40-45 minutes and add more broth.
