One-Pot Honey Garlic Sausage Rice

  • Author: abigail_patterson
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A quick, comforting, and healthy one-pot meal featuring smoked sausage, fluffy rice, and a sweet-savory honey garlic glaze. Perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 1 lb smoked sausage (Andouille or kielbasa), sliced into half-moons
  • 2 tbsp unsalted butter (or olive oil for dairy-free)
  • 1 yellow onion, diced finely
  • 4–5 cloves garlic, minced
  • 1.5 cups long-grain white rice (Jasmine or Basmati)
  • 2 cups low-sodium chicken broth
  • 3 tbsp honey
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 2 green onions, sliced (for garnish)
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Prep ingredients: Slice sausage, dice onion, mince garlic, and measure broth and honey.
  2. Heat butter in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  3. Add sliced sausage in a single layer and cook undisturbed for 2-3 minutes to sear. Stir occasionally until browned, then remove to a plate, leaving rendered fat in the pot.
  4. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until softened.
  5. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  6. Add uncooked rice to the pot and stir for 1-2 minutes to toast the grains.
  7. Pour in chicken broth, honey, and soy sauce. Stir well to scrape up browned bits from the bottom.
  8. Return the cooked sausage to the pot and bring the mixture to a boil.
  9. Once boiling, reduce heat to low, cover tightly with a lid, and simmer for 15-18 minutes without lifting the lid.
  10. Remove from heat and let sit covered for 5 minutes to allow rice to absorb remaining liquid.
  11. Uncover and fluff rice with a fork.
  12. Taste and adjust seasoning. Garnish with sliced green onions and red pepper flakes before serving.

Notes

Do not lift the lid while the rice is simmering to ensure proper steam cooking. Toasting the rice before adding liquid prevents mushiness. If using high-sodium sausage, consider rinsing it before slicing. Leftovers store well in the fridge for up to 4 days or can be frozen for 3 months.
