A quick and comforting one-pot pasta dish featuring cheese tortellini simmered in a rich, creamy tomato and spinach sauce. Ready in just 20 minutes with minimal cleanup.

- 12–16 oz refrigerated cheese tortellini
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 3–4 cloves garlic, minced
- 1 tsp dried oregano
- 14 oz can crushed tomatoes (San Marzano preferred)
- 1 cup low-sodium chicken or vegetable broth
- 1 handful fresh baby spinach
- 1/2 cup heavy cream or half-and-half
- 1/2 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook until translucent.
- Add minced garlic and dried oregano; stir for 30 seconds until fragrant, being careful not to burn.
- Pour in crushed tomatoes and broth. Stir to combine and scrape up browned bits from the bottom. Bring to a gentle simmer.
- Add tortellini to the simmering sauce. Stir to submerge, cover with a lid, and cook according to package directions (usually 3-4 minutes), stirring halfway through.
- Remove lid and stir in fresh spinach. Let residual heat wilt the spinach for about 1-2 minutes.
- Reduce heat to low. Stir in heavy cream and let simmer for 1 minute to meld flavors.
- Remove from heat and stir in Parmesan cheese until melted. Adjust seasoning with salt and pepper. Serve immediately.
Notes
For a lighter option, use half-and-half instead of heavy cream. If using dry tortellini, boil separately and add to sauce at the end to prevent mushiness. To prevent sauce breaking, keep heat low when adding cream. Leftovers keep in the fridge for up to 3 days.
