- 2 thick-cut steaks (sirloin or ribeye, approx. 1-inch thick)
- Yukon Gold potatoes (diced into 1-inch cubes)
- 1 yellow onion (diced)
- 3–4 cloves garlic (minced)
- 2 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp paprika
- Optional: Fresh parsley or chives for garnish
- Optional: Red pepper flakes for heat
- Optional: Parmesan cheese for serving
Instructions
- Preheat oven to 400°F (200°C). If using cast iron, place the skillet in the oven while it preheats.
- Dice potatoes into uniform 1-inch cubes. Pat steaks dry with paper towels and season generously with salt, pepper, and thyme on both sides.
- Remove hot skillet from oven. Add olive oil and let it shimmer. Sear steaks for 3-4 minutes per side for medium-rare. Remove steaks to a plate and cover loosely with foil.
- In the same pan, melt butter. Add diced potatoes and onions, stirring to coat in steak drippings. Season with salt, pepper, and paprika.
- Cook potatoes over medium-high heat for 10-15 minutes, stirring occasionally, until they start softening and getting golden edges.
- Push potatoes to the sides of the pan to create a well. Slice steak into strips or leave whole. Place steak on top of potatoes.
- Transfer skillet to the oven and bake for 15-20 minutes until potatoes are tender and steak reaches desired temperature.
- Optional: Broil for the last 2 minutes for extra crispy potatoes.
- Remove from oven and let steak rest for 5 minutes before slicing. Garnish with fresh herbs and serve directly from the pan.
Notes
Pat steaks dry before searing to ensure a good crust. Ensure potato cubes are uniform in size for even cooking. Rest the steak for 5 minutes after baking to redistribute juices. This recipe is naturally gluten-free.
