- 1.5 lbs (680g) lean ground beef (80/20 or 85/15)
- 2 medium yellow onions, finely diced
- 4 cloves garlic, minced
- 1.5 lbs (680g) red potatoes, cut into 1-inch cubes
- 3 medium carrots, peeled and sliced into half-moons
- 2 cups (480ml) low-sodium beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dry thyme
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- 2 tablespoons butter
Instructions
- Prep the vegetables by washing, peeling, and cutting the carrots and potatoes. Dice the onions and mince the garlic.
- Heat butter in a large skillet over medium-high heat. Add ground beef and cook until browned (5-7 minutes), breaking it up with a spoon. Remove beef and set aside.
- In the same pan, sauté diced onions in beef drippings for 3-4 minutes until translucent. Add garlic and cook for 30 seconds.
- Stir in tomato paste, thyme, parsley, salt, and pepper. Cook for 1-2 minutes to toast the spices.
- Return beef to the pan. Add beef broth and Worcestershire sauce, scraping up browned bits. Add potatoes and carrots.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 25-30 minutes until potatoes are tender.
- Taste and adjust seasoning. If sauce is too thin, simmer uncovered to reduce. Serve hot.
Notes
Use waxy potatoes like red or Yukon Golds to prevent mushiness. Ensure Worcestershire sauce is certified gluten-free if needed. Can be made ahead by prepping veggies and browning beef separately. Leftovers store in the fridge for up to 4 days.
