Description

Ingredients

  • 1 lb (450g) ground beef (80/20 fat ratio preferred)
  • 1/2 cup (50g) plain dried breadcrumbs
  • 1 large egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • Salt and black pepper to taste
  • 2 large russet potatoes, peeled and cubed
  • 2 tbsp unsalted butter
  • 1/4 cup (60ml) whole milk, warmed
  • 1 cup (100g) sharp cheddar cheese, shredded
  • Green onions, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and cube the russet potatoes. Place in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes. Drain well and return to the pot.
  3. Add butter and warm milk to the potatoes. Mash until smooth but with some small lumps. Season with salt and set aside.
  4. In a large bowl, combine ground beef, breadcrumbs, egg, diced onion, minced garlic, Worcestershire sauce, ketchup, salt, and pepper. Mix gently with hands or a spoon; do not overmix.
  5. Form the meat mixture into a loaf shape. Place it in the center of a greased 9×13 inch baking dish or cast-iron skillet.
  6. Spread the mashed potatoes evenly over the top of the meatloaf, ensuring no meat is exposed. Sprinkle shredded cheddar cheese evenly over the potato layer.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly, the potatoes are golden brown, and the internal temperature of the meat reaches 160°F (71°C).
  8. Remove from oven and let rest for 5 minutes before slicing and serving.

Notes

Ensure potatoes are fully tender before mashing. Warm the milk before adding to potatoes to keep them fluffy. Do not overmix the meat to avoid a tough texture. If the top browns too quickly, cover loosely with foil. Leftovers can be stored in the fridge for up to 3 days or frozen unbaked for up to 3 months.
