Lighter Honey Chipotle Chicken Sliders

  • Author: abigail_patterson
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

These lighter honey chipotle chicken sliders feature juicy, yogurt-marinated chicken with a smoky-sweet glaze, served on toasted buns with avocado and red onion. They are a quick, crowd-pleasing appetizer or meal that balances bold flavor with a healthier profile.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup plain, non-fat Greek yogurt
  • 2–3 tablespoons honey
  • 1–2 chipotle peppers in adobo sauce (plus 2 tablespoons adobo sauce)
  • 1 tablespoon freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 1 small onion, grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Slider buns (brioche, potato rolls, or whole wheat)
  • 1 avocado, sliced (or guacamole)
  • 1/2 red onion, thinly sliced
  • Fresh cilantro, chopped

Instructions

  1. In a blender or food processor, combine Greek yogurt, honey, minced garlic, grated onion, lime juice, smoked paprika, cumin, chipotle peppers, and adobo sauce. Blend until smooth.
  2. Place chicken breasts in a large resealable plastic bag. Pour the marinade over the chicken, ensuring all sides are coated. Remove excess air and seal.
  3. Marinate in the refrigerator for at least 30 minutes, ideally 2-4 hours or overnight. Do not exceed 24 hours.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Remove chicken from marinade, letting excess drip off. Discard remaining marinade.
  6. Cook chicken on the grill for 5-6 minutes per side, or until internal temperature reaches 165°F (74°C).
  7. Remove chicken from heat and let rest for 5 minutes to redistribute juices.
  8. Slice the rested chicken into thin strips or bite-sized chunks.
  9. Toast slider buns in a toaster oven or skillet with butter/oil until golden brown.
  10. Assemble sliders by placing chicken on the bottom bun, topping with avocado, red onion, and cilantro. Serve immediately.

Notes

For a smoother marinade, ensure chipotle peppers are fully pureed. Do not skip the resting step for the chicken to keep it juicy. For a low-carb option, serve in lettuce wraps or over cauliflower rice. For a vegan version, substitute chicken with firm tofu or seitan.
