Description

A quick and indulgent weeknight meal featuring seared flank steak bites tossed in a rich garlic butter sauce with linguine, ready in under 20 minutes.

Ingredients

Scale
  • 1 lb flank steak or sirloin, cut into 1-inch cubes
  • 8 oz linguine or fettuccine
  • 4–5 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 1/2 tsp red pepper flakes (optional)
  • Kosher salt and black pepper, to taste
  • Reserved pasta water

Instructions

  1. Pat the steak dry with paper towels and cut into 1-inch cubes. Season generously with salt and black pepper.
  2. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve one cup of pasta water before draining.
  3. Heat a large skillet over medium-high heat with olive oil. Sear steak bites in a single layer for 2-3 minutes per side until browned. Remove steak and set aside.
  4. Reduce heat to medium. Add butter and minced garlic to the skillet. Sauté for 1 minute until fragrant, being careful not to burn the garlic. Add red pepper flakes.
  5. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
  6. Add the cooked pasta and steak bites back into the pan. Toss to combine.
  7. Add reserved pasta water a little at a time, tossing constantly until the sauce becomes creamy and coats the pasta. Stir in parsley. Serve immediately.

Notes

Ensure steak is patted dry before searing to ensure a good crust. Do not overcrowd the pan when searing steak; cook in batches if necessary. Use reserved starchy pasta water to emulsify the sauce. Let steak rest for a minute after searing to redistribute juices.
