  • 1/4 tsp Red Pepper Flakes
  • 1 tsp High-Heat Oil (Avocado or Grapeseed)
  • Sea Salt and Black Pepper to taste

Instructions

  1. Pat the steak cubes dry with paper towels and cut into uniform 1-inch pieces.
  2. Season the steak cubes with salt, pepper, and a teaspoon of oil, tossing to coat evenly.
  3. In a microwave-safe bowl, combine butter, minced garlic, parsley, lemon zest, lemon juice, and red pepper flakes. Microwave for 30-45 seconds until melted and whisk until smooth.
  4. Heat a cast iron skillet over medium-high heat with high-heat oil until the oil shimmers and just starts to smoke.
  5. Add steak cubes to the pan in a single layer, ensuring not to overcrowd. Do not move for 60 seconds to develop a crust.
  6. Toss and cook for another 3-4 minutes until browned on all sides and cooked to desired doneness (approx. 5-6 minutes total for medium-rare).
  7. Remove pan from heat and pour the cowboy butter mixture over the hot steak, tossing gently to coat.
  8. Serve immediately while the butter is warm and liquid.

Notes

Ensure steak is completely thawed and patted dry to achieve a good sear. Do not overcrowd the pan; cook in batches if necessary. Let steak sit at room temperature for 15 minutes before cooking for even heat distribution. The butter sauce can be made ahead and stored in the fridge for up to a week.
