Description
A simple, high-protein baked chicken breast recipe using only three ingredients: chicken, olive oil, and kosher salt. This method guarantees moist, tender results every time with minimal prep.
Ingredients
- Boneless, skinless chicken breasts
- Extra virgin olive oil
- Kosher salt
Instructions
- Preheat oven to 400°F (200°C).
- Line a rimmed baking sheet with parchment paper.
- Pat chicken breasts dry with paper towels to remove surface moisture.
- Place chicken on the prepared baking sheet.
- Drizzle about 1 tablespoon of olive oil over each breast and rub it in to coat every side.
- Sprinkle about 1/2 teaspoon of kosher salt over each breast and massage it into the oil to create a surface brine.
- Let the chicken sit for 10 minutes while the oven finishes heating.
- Place the baking sheet in the center of the oven.
- Bake for 18 to 22 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove chicken from the oven and transfer to a plate.
- Cover loosely with foil and let rest for 5 minutes before slicing or serving.
Notes
For even cooking, pound chicken breasts to an even one-inch thickness if they are uneven. Do not overcrowd the pan to allow for proper browning. Always use a thermometer to ensure the internal temperature reaches 165°F (74°C). Resting the chicken is crucial to redistribute juices.
