  • 68 slices thick-cut bacon
  • 68 brioche or potato slider buns
  • 2 tablespoons yellow mustard
  • 3 tablespoons raw honey
  • 1 tablespoon full-fat mayonnaise
  • 68 slices sharp cheddar cheese
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, sliced thin
  • Freshly cracked black pepper to taste
  • Butter for toasting buns

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange bacon slices in a single layer. Bake for 12-15 minutes until crispy. Remove, drain on paper towels, let cool slightly, and break into large chunks.
  2. In a small mixing bowl, whisk together yellow mustard, honey, and mayonnaise until smooth and creamy. Set aside.
  3. In a large skillet over medium heat, warm the shredded chicken for 3-4 minutes. If dry, add a splash of chicken broth or water. Stir in half of the honey mustard sauce directly into the chicken.
  4. Split the slider buns and lightly butter the cut sides. Toast cut-side down in the skillet or on a griddle for 1-2 minutes until golden brown. Remove and set aside.
  5. Assemble the sliders by placing honey mustard chicken on the bottom bun. Top with a slice of sharp cheddar cheese.
  6. Place the chicken and cheese under the broiler for 30-60 seconds until the cheese is melted.
  7. Remove from heat and add shredded iceberg lettuce, thin tomato slices (patted dry), and crispy bacon chunks. Drizzle with the remaining honey mustard sauce.
  8. Top with the upper bun, press gently, and serve immediately.

Notes

Toast the buns generously to prevent sogginess. Pat tomatoes dry before adding. Assemble sliders right before eating to maintain texture. For leftovers, store components separately in airtight containers for up to 3 days.
