  • Author: abigail_patterson
  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Description

A quick, savory, and sweet weeknight dinner that comes together in under 20 minutes. This meal prep-friendly bowl features tender chicken glazed in a sticky honey BBQ sauce served over fluffy rice.

Ingredients

Scale
  • 1 cup Jasmine or Basmati rice
  • 2 cups water (for rice)
  • 2 boneless, skinless chicken breasts
  • 1/2 cup Honey BBQ sauce
  • 1 tablespoon Soy sauce (low-sodium recommended)
  • 1 clove Garlic, minced
  • 1 teaspoon Oil (optional, for skillet)
  • Green onions, sliced (for garnish)
  • Sesame seeds, toasted (for garnish)

Instructions

  1. Rinse 1 cup of rice under cold water until water runs clear. Add to a rice cooker or saucepan with 2 cups of water. If using stovetop, bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  2. While rice cooks, pat chicken breasts dry with paper towels. Slice into thin strips or bite-sized cubes.
  3. In a small bowl, whisk together 1/2 cup honey BBQ sauce, 1 tablespoon soy sauce, and 1 minced clove of garlic.
  4. Heat a large skillet over medium-high heat. Add oil if necessary. Add chicken pieces in a single layer (cook in batches if needed). Cook undisturbed for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes until internal temperature reaches 165°F (74°C).
  5. Pour the prepared sauce over the cooked chicken. Reduce heat to medium-low and toss to coat. Simmer for 2-3 minutes until the sauce thickens and glazes the chicken.
  6. Spoon rice into bowls, top with saucy chicken, and garnish with green onions and sesame seeds. Serve immediately.

Notes

Pat chicken dry before cooking to ensure a good sear. Do not overcrowd the pan to avoid steaming. Watch the sauce closely as honey burns easily. For meal prep, store in airtight containers for up to 4 days. Reheat with a splash of water to keep rice moist.
