- 1/2 cup (113g) unsalted butter, softened to room temperature
- 1/2 cup (100g) granulated sugar
- 1/2 cup (approx. 50-60g) vanilla protein powder (whey isolate or plant-based)
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 2 tablespoons granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter and granulated sugar on medium speed for 2-3 minutes until pale and fluffy.
- Add the egg and vanilla extract, mixing on low speed until just combined.
- In a separate bowl, whisk together the flour, baking powder, cream of tartar, and salt.
- Slowly add the dry ingredients to the wet mixture on low speed until just combined.
- Add the protein powder and mix on low speed until fully incorporated.
- In a small bowl, mix the 2 tablespoons of sugar with the 1 teaspoon of cinnamon for the coating.
- Scoop dough into 1.5-inch balls, roll in hands to smooth, then coat in the cinnamon-sugar mixture.
- Place coated balls on baking sheets, leaving 2 inches between them.
- Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Do not overbake; cookies will firm up as they cool. For softer cookies, chill dough for 30 minutes before baking. Can be stored in an airtight container for up to 5 days or frozen for 3 months. Add a slice of bread to the container to maintain softness.
