- 1 cup uncooked white rice
- 2 large green bell peppers, chopped
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 14.5 oz canned diced tomatoes (with juice)
- 8 oz tomato sauce (no-salt-added recommended)
- 1 cup beef broth (low-sodium)
- 1 tsp Italian seasoning
- 1.5 cups shredded mozzarella cheese
- 0.5 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Cook the rice according to package directions and set aside.
- In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain excess grease if necessary.
- Add diced onions and chopped bell peppers to the skillet; sauté for 3-4 minutes until onions are translucent.
- Add minced garlic and cook for 1 minute more.
- Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Add the cooked rice to the skillet and stir to combine everything evenly.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle mozzarella and cheddar cheese over the top.
- Bake for 20-25 minutes until cheese is bubbly and golden brown.
- Let rest for 5-10 minutes before serving.
Notes
For best results, shred your own cheese to ensure proper melting. If using brown rice, par-cook it first. Let the casserole rest before serving to allow liquids to reabsorb. This dish tastes even better the next day.
