  • 1.5 lbs flank steak or sirloin, sliced thinly against the grain
  • 2 medium yellow onions, sliced into strips
  • 2 large bell peppers (mix of green and red), sliced into strips
  • 8 oz provolone cheese slices
  • 4 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • Olive oil and butter for frying
  • Salt and black pepper to taste

Instructions

  1. Pat the beef dry with paper towels and slice it thinly against the grain into bite-sized strips. Season generously with salt and black pepper.
  2. Slice onions and bell peppers into thin, uniform strips. Mince the garlic.
  3. Heat a large skillet over medium-high heat with olive oil. Sear the beef in a single layer for 2-3 minutes until browned, then flip and cook for 1 more minute. Remove beef and set aside.
  4. In the same pan, add onions and peppers. Reduce heat to medium and cook for 5-7 minutes until soft and translucent.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Return the beef to the pan. Pour in beef broth and Worcestershire sauce, scraping up browned bits from the bottom. Simmer for 2 minutes.
  7. Reduce heat to low, lay provolone slices over the mixture, and cover with a lid for 1-2 minutes until cheese is melted.
  8. Serve immediately in bowls over rice, mashed potatoes, or on its own.

Notes

For best texture, partially freeze the steak for 20 minutes before slicing. Do not crowd the pan when searing beef to ensure proper browning. Add garlic last to prevent burning. For meal prep, store beef and veggie mixture separately from cheese to maintain texture.
