Ingredients

Instructions
- Slice the smoked sausage into half-moon pieces and dice the onion.
- Place the sliced sausage and diced onions into the bottom of a 6-quart slow cooker. (Optional: Brown the sausage in a skillet for 5-7 minutes before adding for extra flavor).
- Rinse and drain the kidney, black, and pinto beans thoroughly to remove excess sodium and starchy liquid. Add them to the slow cooker.

- Pour the sauce mixture over the beans and sausage in the slow cooker. Stir gently to coat everything evenly.
- Cover and cook on Low for 6-8 hours or on High for 3-4 hours.
- Check consistency before serving. If too thin, cook uncovered on High for 30 minutes to reduce. If too thick, add a splash of water or broth.
- Taste and adjust seasoning with salt, pepper, or a splash of vinegar if needed.
- Let sit on the ‘Warm’ setting for 15-20 minutes before serving to allow flavors to meld.
