Instructions
- Prep the vegetables: Wash and dice the red potatoes, yellow onion, green bell pepper, and celery. Mince the garlic.
- Sauté the holy trinity: Melt butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add onions, bell peppers, and celery. Sauté for 5 minutes until soft and translucent.
- Add aromatics and spices: Stir in minced garlic for 1 minute until fragrant. Sprinkle Cajun seasoning over the vegetables and stir to coat.
- Add potatoes and broth: Add diced potatoes and chicken broth to the pot. Scrape the bottom to release browned bits. Bring to a boil.

- Blend half the soup: Remove from heat. Use an immersion blender to blend about half of the soup directly in the pot for a creamy texture with chunks.

- Serve: Ladle into bowls and garnish with green onions, cheese, or bacon. Serve immediately with crusty bread.

For a vegetarian version, substitute chicken broth with vegetable broth and omit sausage.
