  • 1 cup 100% pure pineapple juice
  • 1/2 cup dark brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 45 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 1 tbsp water (slurry)
  • Salt and black pepper, for seasoning
  • Sliced green onions, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pat the pork loin dry with paper towels and season generously with salt and black pepper on all sides.
  3. In a small saucepan, combine pineapple juice, brown sugar, soy sauce, garlic, ginger, rice vinegar, and sesame oil. Whisk until sugar is dissolved.
  4. Bring the mixture to a gentle simmer over medium heat for 5 minutes. Remove from heat and stir in the cornstarch slurry. Stir constantly until the glaze thickens slightly.
  5. Optional: Heat a large oven-safe skillet with oil over medium-high heat. Sear the pork loin on all sides for 2-3 minutes until golden brown.
  6. Place the pork in a roasting pan or baking dish. Pour half of the glaze over the pork.
  7. Roast for 20-25 minutes per pound. About 30 minutes before the end, baste the pork with the reserved glaze.
  8. Check the internal temperature with a meat thermometer. Remove when it reaches 145°F (63°C).
  9. Transfer pork to a cutting board, tent with foil, and rest for 10-15 minutes.
  10. Slice against the grain and drizzle with remaining pan juices. Garnish with green onions.

Notes

For a gluten-free option, swap soy sauce for tamari. Bring pork to room temperature 30 minutes before cooking for even results. Do not skip the resting step to ensure juicy meat. If using a slow cooker, cook on low for 6-8 hours and broil at the end to caramelize.
