- 2–3 sprigs fresh rosemary, leaves stripped and finely chopped
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 4 bone-in or boneless center-cut pork chops (about 1 inch thick)
Instructions
- In a small bowl, whisk together olive oil, chopped rosemary, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and pepper until emulsified.
- Place pork chops in a resealable bag or shallow dish. Pour marinade over meat, ensuring even coating. Massage marinade into meat and let sit at room temperature for 15-30 minutes.
- Preheat grill to medium-high heat (400°F-450°F). Clean grates and lightly oil them to prevent sticking.
- Remove chops from marinade, letting excess drip off. Discard used marinade.
- Place chops on the hot grill. Cook for 4-5 minutes on the first side without moving to allow searing.
- Flip chops and cook for another 4-5 minutes on the second side. If chops are thick, move to indirect heat for the last few minutes to cook through.
- Check internal temperature with an instant-read thermometer; it should reach 145°F (63°C).
- Remove chops from grill and transfer to a plate. Tent loosely with foil and let rest for at least 5 minutes before serving.
Notes
Do not marinate for longer than 1 hour as the acid can break down the meat texture. Ensure grill grates are clean and oiled to prevent sticking. Pat chops dry before grilling for better searing. Pork is safe to eat at 145°F with a slight pink center. Resting the meat is crucial for juiciness.
