Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 large fresh pineapple, cut into chunks
  • 1 red onion, cut into 1-inch squares
  • 1 green bell pepper, cut into 1-inch squares
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • Toasted sesame seeds, for garnish
  • Green onions, sliced thinly, for garnish

Instructions

  1. Soak wooden skewers in cold water for at least 30 minutes to prevent burning.
  2. Pat chicken thighs dry and cut into uniform 1-inch cubes.
  3. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, ginger, garlic, cornstarch, and sesame oil until smooth.
  4. Pour half of the marinade over the chicken, toss to coat, cover, and refrigerate for 30 minutes to 4 hours. Reserve the remaining marinade for basting.
  5. Preheat grill to medium-high heat (approx. 400°F) and oil the grates.
  6. Thread the skewers alternating between chicken, pineapple, onion, and bell pepper, leaving space between pieces.
  7. Grill skewers for 4-5 minutes per side, turning occasionally, until chicken reaches an internal temperature of 165°F.
  8. Baste with reserved marinade during the last 2 minutes of cooking.
  9. Remove from grill and let rest for 5 minutes before serving.
  10. Garnish with toasted sesame seeds and sliced green onions.

Notes

Ensure pineapple chunks are firm to prevent falling off skewers. Do not marinate longer than 4 hours as the acid can make the meat mushy. If using wooden skewers, soaking is crucial. For a spicy kick, add sriracha or red pepper flakes to the marinade.
