Ingredients

  • Yukon Gold potatoes (peeled and cut into 1-inch cubes)
  • Thick-cut bacon (cut in half crosswise)
  • Extra virgin olive oil (about 2 tablespoons)
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Freshly cracked black pepper
  • Kosher salt
  • Wooden bamboo skewers (soaked in water)

Instructions

  1. Peel potatoes and cut into uniform 1-inch cubes. Place in a large pot, cover with cold water, add a pinch of salt, and bring to a boil.
  2. Reduce heat to medium and parboil potatoes for 8-10 minutes until fork-tender but holding shape. Drain and let cool slightly.
  3. While potatoes boil, soak wooden skewers in warm water for at least 30 minutes to prevent burning.
  4. In a large bowl, toss drained potatoes with olive oil, smoked paprika, garlic powder, onion powder, and black pepper. Do not add extra salt yet.
  5. Preheat grill to medium-high heat (375-400°F). Clean and oil the grates.
  6. Thread skewers by wrapping a half-strip of bacon around a potato cube, then alternating with another potato cube and bacon wrap. Leave space between pieces. Aim for 3-4 pieces per skewer.
  7. Place skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes, until bacon is crispy and potatoes have grill marks.
  8. Remove from grill and let rest for 2-3 minutes before serving immediately.
