Description

  • 2 large fresh French croissants per sandwich
  • 2 large eggs per sandwich
  • Unsalted butter, softened (for greasing pan and richness)
  • Sharp cheddar or Gruyère cheese slices
  • Sea salt and freshly cracked black pepper to taste
  • Optional: Thinly sliced ham, crispy bacon, or sautéed spinach

Instructions

  1. Slice croissants horizontally, leaving a small hinge so they stay connected. Place on a baking sheet and toast in the oven at 350°F (175°C) for 3-4 minutes until golden.
  2. While croissants toast, heat a non-stick skillet over medium-low heat and add a small knob of butter.
  3. Crack eggs into the pan and cook slowly until whites are set but yolks are still runny (or to preferred doneness). Season with salt and pepper.
  4. Remove toasted croissants from the oven. Place a slice of cheese on the bottom half of each croissant.
  5. Slide the cooked eggs on top of the cheese. Add optional ham or bacon if using.
  6. Press the top half of the croissant gently onto the filling. Serve immediately while hot and crispy.

Notes

Toast the croissants first to create a moisture barrier and prevent sogginess. Cook eggs slightly underdone as they will continue to cook from residual heat. If making multiple sandwiches, keep finished ones warm in a low oven (200°F). Avoid freezing assembled sandwiches as the croissant will become soggy upon thawing.
