Description

A sophisticated no-bake cheesecake that combines the rich, tangy creaminess of cream cheese and mascarpone with the bold, smooth flavor of cold brew coffee and crunchy ladyfingers, all without turning on the oven.


Ingredients

  • Cold Brew Concentrate
  • Sugar or Simple Syrup
  • Full-fat brick-style Cream Cheese (room temperature)
  • Mascarpone Cheese
  • Heavy Whipping Cream (at least 36% fat, cold)
  • Vanilla Extract (pure)
  • Powdered Sugar
  • Dark Chocolate (for shavings)
  • Unsweetened Cocoa Powder (for dusting)

Instructions

  1. In a shallow bowl, combine cold brew concentrate with sugar or simple syrup, stirring until dissolved. Quickly dip ladyfingers (1-2 seconds per side) and set aside.
  2. In a large bowl, beat room-temperature cream cheese and mascarpone on medium speed until smooth (2-3 minutes). Add powdered sugar and vanilla extract, beating until combined and glossy.
  3. In a separate cold bowl, whip heavy cream on high speed until stiff peaks form (2-4 minutes).
  4. Gently fold one-third of the whipped cream into the cheese mixture to lighten it, then fold in the remaining cream until uniform and fluffy.
  5. Line the bottom of a 9-inch springform pan with parchment if desired. Arrange a layer of dipped ladyfingers in the pan. Spread half the cheesecake filling over the ladyfingers. Add a second layer of dipped ladyfingers, then top with the remaining filling, smoothing the top.
  6. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to set.
  7. Before serving, remove the springform ring. Shave dark chocolate over the top and dust lightly with cocoa powder. Slice with a warm, dry knife for clean cuts.

Notes

Ensure cream cheese is at room temperature for a smooth batter. Keep heavy cream very cold for best whipping results. Do not soak ladyfingers too long or they will become mushy. For clean slices, dip knife in hot water and wipe dry before each cut. Can be stored in the refrigerator for up to 5 days. Individual slices can be frozen for up to 2 months.
