- 1 cup sharp cheddar cheese, shredded
- 4 slices sourdough or whole wheat bread
- 2 tablespoons fresh chives or green onions, chopped
- 1 tablespoon butter or olive oil

Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk eggs with salt and pepper, then mix in shredded cheese and chopped chives.
- If using soft bread, lightly toast slices for 2 minutes to add structure.
- Cut each bread slice in half diagonally to create 8 triangles.
- Place a generous spoonful of the egg and cheese mixture onto one half of each triangle, leaving a border.
- Fold the other half of the bread over the filling and press down gently.
- Crimp the edges firmly with a fork to seal the filling inside.
- Brush the tops with melted butter or olive oil.
- Bake for 12-15 minutes until golden brown and crispy.
- Let cool for 2 minutes before serving to allow the filling to set.

Toast the bread lightly before assembling to prevent sogginess. Ensure the edges are sealed tightly with a fork to prevent leaking. For best texture, use sharp cheddar cheese. These can be frozen unbaked and baked from frozen, adding 2-3 minutes to cook time.
