  • 1 cup short-grain white rice (e.g., Kokuho Rose)
  • 2 cups water or chicken broth
  • 1 pound protein of choice (ground turkey, chicken breast, or extra-firm tofu)
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon brown sugar
  • 1 tablespoon cooking oil (for skillet)
  • 2 stalks green onions, sliced
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse 1 cup of rice under cold water until water runs clear. Combine with 2 cups of water or broth in a pot.
  2. Bring rice to a boil, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let sit covered for 10 minutes, then fluff with a fork.
  3. While rice cooks, whisk together 3 tablespoons soy sauce, 1 tablespoon brown sugar, 1 teaspoon sesame oil, and 1/2 teaspoon black pepper in a small bowl. Set aside.
  4. If using tofu, press and cube it. Mince garlic and ginger, and slice green onions.
  5. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add protein and cook until browned and cooked through (5-7 minutes). Remove protein and set aside.
  6. In the same pan, add frozen vegetables and sauté for 2-3 minutes until heated through.
  7. Return protein to the pan with vegetables. Pour sauce over everything and toss to coat. Simmer for 1 minute to thicken.
  8. Assemble bowls by placing a scoop of rice in a bowl, topping with the meat and vegetable mixture, and garnishing with green onions and sesame seeds. Serve immediately.

Notes

Always rinse rice to remove excess starch for fluffy grains. Do not overcrowd the pan when cooking protein to ensure proper browning. Taste the sauce before adding to adjust saltiness. Leftovers store well for 3 days; reheat with a splash of water to restore texture.
