A creamy, savory one-pot ground beef stroganoff that uses lean beef and a lighter sauce base for a healthier, family-friendly weeknight meal.

- 1 lb lean ground beef (90/10 or 93/7)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 1 cup low-sodium beef broth
- 1 tbsp tomato paste
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika
- 8 oz egg noodles
- 1/2 cup heavy cream or half-and-half
- 1/2 cup sour cream
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Boil egg noodles in a large pot of salted water according to package directions until al dente. Drain and set aside.
- In a large skillet or Dutch oven, melt butter over medium heat. Add diced onion and a pinch of salt; cook for 3-4 minutes until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Add ground beef to the skillet, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned. Drain excess grease if necessary.
- Add sliced mushrooms and cook for 3-4 minutes until they release moisture and brown.
- Sprinkle flour over the beef and mushroom mixture. Stir constantly for 1-2 minutes to create a roux.
- Stir in tomato paste, Dijon mustard, Worcestershire sauce, and smoked paprika. Cook for 1 minute.
- Slowly pour in beef broth while whisking to prevent lumps. Bring to a simmer.
- Simmer the sauce for 5 minutes until it thickens slightly. Season with salt and pepper.
- Add the cooked noodles to the skillet. Pour in heavy cream or half-and-half and stir to coat.
- Remove the skillet from heat. Stir in sour cream to prevent curdling.
- Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, use half-and-half instead of heavy cream and Greek yogurt instead of sour cream. To make it gluten-free, use gluten-free noodles and cornstarch instead of flour. If the sauce is too thick, add a splash of broth or milk. Always remove from heat before adding sour cream to prevent curdling.
