  • 1.5 lbs Sirloin Steak, cut into 1-inch cubes
  • 1 lb Waxy Potatoes (Yukon Gold or red), cut into 1-inch cubes
  • 4 tbsp Unsalted Butter
  • 45 cloves Garlic, freshly minced
  • 2 tbsp Olive Oil
  • 1 tsp Dried Thyme
  • 1/2 tsp Black Pepper, freshly cracked
  • Sea Salt, to taste
  • 2 tbsp Fresh Parsley, chopped

Instructions

  1. Cut the sirloin steak into uniform 1-inch cubes and pat dry with paper towels to ensure a good sear.
  2. Wash and cut potatoes into 1-inch cubes. Toss them in a bowl with olive oil, salt, pepper, and dried thyme until coated.
  3. Heat a large skillet (preferably cast-iron) over medium-high heat. Add 2 tbsp olive oil and let it get hot until slight wisps of smoke appear.
  4. Add beef bites to the pan in a single layer, ensuring not to overcrowd. Cook for 2-3 minutes without moving to develop a brown crust, then flip and cook for another 2 minutes for medium-rare.
  5. Remove beef from the pan and set aside on a plate, leaving the rendered fat in the skillet.
  6. Reduce heat to medium. Add the seasoned potatoes to the same skillet. Cook for 8-10 minutes, stirring occasionally, until tender and crispy.
  7. Add butter and minced garlic to the pan with the potatoes. Stir constantly for about 30 seconds until butter melts and garlic is fragrant, being careful not to burn the garlic.
  8. Return the beef and any accumulated juices to the pan. Toss everything together to coat the beef in the garlic butter sauce.
  9. Cook for another 1-2 minutes to heat the beef through. Taste and adjust seasoning with more salt or pepper if needed.
  10. Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

Do not overcrowd the pan when searing the beef to ensure proper browning rather than steaming. Pat the beef dry before cooking for the best crust. Cut potatoes uniformly so they cook evenly. Watch the garlic closely as it burns quickly. This recipe is naturally gluten-free.
