  • 1 packet fajita seasoning (low-sodium preferred)
  • 1/2 cup low-sodium chicken broth
  • 1 lime, juiced
  • 1 tablespoon avocado oil (for greasing)

Instructions

  1. Rinse chicken breasts and pat dry. Place them in a single layer at the bottom of a 6-quart slow cooker.
  2. Slice bell peppers and onions into half-inch strips and scatter them evenly over the chicken.
  3. Pour the salsa over the vegetables and chicken, ensuring good coverage.
  4. Sprinkle the fajita seasoning evenly over the top.
  5. Pour the chicken broth around the edges of the slow cooker.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F.
  7. Remove chicken from the pot and let it rest for a few minutes.
  8. Stir the vegetables in the slow cooker; if sauce is too thin, leave lid off for 15 minutes to reduce.
  9. Shred the chicken using two forks and return it to the slow cooker.
  10. Stir shredded chicken into the vegetable mixture.
  11. Squeeze fresh lime juice over everything and stir to combine.
